Rosemary Mixed Nuts (Serves 10–12)


Ingredients

  • 4 ounces walnut halves
  • 4 ounces cashews
  • 4 ounces whole almonds
  • 2 ounces Brazil nuts
  • 2 ounces peeled peanuts
  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh rosemary
  • ¼ teaspoon cayenne, or to taste
  • Kosher salt
  • Freshly ground black pepper
  • Fresh rosemary sprigs

Preparation

Preheat the oven to 375ºF. Combine the nuts, olive oil, rosemary, and cayenne in a bowl and season generously with salt and pepper. Transfer the nuts to a baking sheet and bake for 8–10 minutes, until golden and fragrant, stirring occasionally. Remove from the oven and allow to cool slightly. Pour the nuts into a serving bowl, garnish with rosemary, and serve while warm.
